Bells Chocolate Chip Cookies

Ingredients

  • ¼ cup canola oil
  • ½ cup brown sugar
  • 1 large egg yolk
  • ¾ teaspoon vanilla extract
  • ½ cup wholemeal or white flour
  • ¼ teaspoon salt
  • ¼ teaspoon bi-carb soda
  • ¼ teaspoon baking powder
  • ¼ cup dark chocolate chips

Method

  1. Preheat the oven to 190. Line your cookie trays with baking paper.
  2. In a medium bowl, add the solid canola oil and brown sugar, and beat until fluffy about combined, about 30 seconds.
  3. Add the egg yolk and vanilla, and beat until combined.
  4. Next, evenly sprinkle the flour, salt, bi-carb soda and baking powder on top of the coconut oil mixture. Beat to combine everything well.
  5. Finally, stir in the chocolate chips.
  6. Press the dough flat in the bowl (as best you can), and roughly divide the dough in quarters. From each quarter, make 2 cookies, for a total of 8 cookies.
  7. Space the cookies evenly on the baking paper, and press them down slightly--not totally flat.
  8. Bake for 9-11 minutes, until the edges are starting to turn golden brown.
  9. Let cool on the baking sheet for 2 minutes, and then move to a wire rack to cool.
